Microgreen means micro + green, literally, which means the seedling version of a plant. Microgreens are an intermadiate stage between sprouts and baby greens. Sprouts are 2- to 5-day-old, microgreens are 7- to 14-day-old, while baby greens are 3- to 4-week-old.

They are cut above the soil level, excluding the root part. The main use of microgreens is for garnishing the plate by high-end restaurants, which is to enhance the visual presentation and also adding some zing to the meaty food.

Microgreens are also used in salad, sandwich, stir-fry, juice, soup and more.

To make things even fancier, microgreens are said to be a functional food with 40x healthier than regular greens. Thanks to research publications, many microgreens were found to contain comparatively higher nutrition than their mature counterpart.
